Ingredients

  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and slice the red and yellow bell peppers in half, removing the seeds and stems.
  3. In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and lemon juice.
  4. Add the bell pepper halves to the bowl and toss until they are well coated with the oil mixture.
  5. Place the coated bell peppers cut side down on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20-25 minutes, or until the skins are blistered and the peppers are tender.
  7. Remove from the oven and let them cool slightly before peeling off the skins if desired.
  8. Sprinkle the roasted bell peppers with chopped fresh parsley before serving.
