- Red bell pepper - 1 medium
- Yellow bell pepper - 1 medium
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and slice the red and yellow bell peppers in half, removing the seeds and stems.
- In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and lemon juice.
- Add the bell pepper halves to the bowl and toss until they are well coated with the oil mixture.
- Place the coated bell peppers cut side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the skins are blistered and the peppers are tender.
- Remove from the oven and let them cool slightly before peeling off the skins if desired.
- Sprinkle the roasted bell peppers with chopped fresh parsley before serving.
