Ingredients
- Long-grain rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Fresh parsley - 1 cup, finely chopped
- Fresh mint - 1/2 cup, finely chopped
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1/4 medium, finely chopped
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is tender and the water is absorbed.
- Remove from heat and let the rice sit, covered, for another 5 minutes. Fluff with a fork and let it cool slightly.
- In a large mixing bowl, combine the chopped parsley, mint, diced tomato, cucumber, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the cooked rice to the vegetable mixture and pour the dressing over it. Gently toss until everything is well combined.
- Serve at room temperature or chilled, garnished with additional herbs if desired.
