Ingredients

  • Long-grain rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Fresh parsley - 1 cup, finely chopped
  • Fresh mint - 1/2 cup, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1/4 medium, finely chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is tender and the water is absorbed.
  4. Remove from heat and let the rice sit, covered, for another 5 minutes. Fluff with a fork and let it cool slightly.
  5. In a large mixing bowl, combine the chopped parsley, mint, diced tomato, cucumber, and red onion.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  7. Add the cooked rice to the vegetable mixture and pour the dressing over it. Gently toss until everything is well combined.
  8. Serve at room temperature or chilled, garnished with additional herbs if desired.
