- Zucchini - 2 medium (about 200 grams total)

- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 ml
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, ground cumin, ground cinnamon, salt, and black pepper to the onions, stirring for another minute until fragrant.
- Add the diced zucchini to the saucepan and sauté for 5 minutes until slightly softened.
- Stir in the soaked and drained rice, mixing well with the zucchini and spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh chopped parsley and serve warm.
