Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium (about 200 grams total)
  • Onion - 1 small (about 70 grams), finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, ground cumin, ground cinnamon, salt, and black pepper to the onions, stirring for another minute until fragrant.
  4. Add the diced zucchini to the saucepan and sauté for 5 minutes until slightly softened.
  5. Stir in the soaked and drained rice, mixing well with the zucchini and spices.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh chopped parsley and serve warm.
