Ingredients
- Basmati rice - 1 cup (200g)
- Lamb shoulder, cut into cubes - 300g
- Onion, finely chopped - 1 medium (150g)
- Garlic cloves, minced - 2
- Ground cumin - 1 tsp
- Ground cinnamon - 1/2 tsp
- Ground allspice - 1/2 tsp
- Salt - 1 tsp (to taste)
- Black pepper - 1/2 tsp (to taste)
- Vegetable oil - 2 tbsp
- Water - 2 cups (500ml)
- Fresh parsley, chopped - 2 tbsp (for garnish)
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes and drain.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cubed lamb to the pot, browning the meat on all sides for about 10 minutes.
- Stir in the ground cumin, cinnamon, allspice, salt, and black pepper, mixing well to coat the lamb in the spices.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes until the lamb is tender.
- Once the lamb is cooked, add the soaked and drained rice to the pot. Stir gently to combine, then cover and cook on low heat for an additional 15-20 minutes, or until the rice is fluffy and has absorbed all the liquid.
- Remove from heat and let it sit, covered, for an extra 5 minutes before fluffing the rice with a fork.
- Serve the Riz Ma' Makhloot Wa Kharouf hot, garnished with chopped parsley and lemon wedges on the side.
