Ingredients

  • Basmati rice - 1 cup (200g)
  • Lamb shoulder, cut into cubes - 300g
  • Onion, finely chopped - 1 medium (150g)
  • Garlic cloves, minced - 2
  • Ground cumin - 1 tsp
  • Ground cinnamon - 1/2 tsp
  • Ground allspice - 1/2 tsp
  • Salt - 1 tsp (to taste)
  • Black pepper - 1/2 tsp (to taste)
  • Vegetable oil - 2 tbsp
  • Water - 2 cups (500ml)
  • Fresh parsley, chopped - 2 tbsp (for garnish)
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes and drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cubed lamb to the pot, browning the meat on all sides for about 10 minutes.
  4. Stir in the ground cumin, cinnamon, allspice, salt, and black pepper, mixing well to coat the lamb in the spices.
  5. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes until the lamb is tender.
  6. Once the lamb is cooked, add the soaked and drained rice to the pot. Stir gently to combine, then cover and cook on low heat for an additional 15-20 minutes, or until the rice is fluffy and has absorbed all the liquid.
  7. Remove from heat and let it sit, covered, for an extra 5 minutes before fluffing the rice with a fork.
  8. Serve the Riz Ma' Makhloot Wa Kharouf hot, garnished with chopped parsley and lemon wedges on the side.
