Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs - 300 grams, boneless and skinless
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Chicken broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Allspice - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the chicken thighs to the skillet, season with salt, black pepper, allspice, and the cinnamon stick. Cook until the chicken is browned on all sides.
  4. Stir in the diced carrot, green bell pepper, and chopped tomato. Cook for another 5 minutes until the vegetables start to soften.
  5. Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and vegetables.
  6. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and cook for 20 minutes, or until the rice is tender and has absorbed the liquid.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, remove the cinnamon stick, and garnish with fresh parsley before serving.
