Ingredients
- Basmati rice - 150 grams
- Chicken thighs - 200 grams, boneless and skinless
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Cinnamon stick - 1 piece
- Allspice - 1 teaspoon
- Cardamom pods - 3, crushed
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat vegetable oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic, cinnamon stick, allspice, and crushed cardamom pods to the pot. Stir for another minute until fragrant.
- Add the chicken thighs to the pot, season with salt and black pepper, and brown them for about 5-7 minutes on all sides.
- Drain the soaked rice and add it to the pot, stirring well to mix with the spices and chicken.
- Pour in 400 milliliters of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork, serve hot, garnished with fresh parsley.
