Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs - 200 grams, boneless and skinless
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Cinnamon stick - 1 piece
  • Allspice - 1 teaspoon
  • Cardamom pods - 3, crushed
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 400 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat vegetable oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cinnamon stick, allspice, and crushed cardamom pods to the pot. Stir for another minute until fragrant.
  4. Add the chicken thighs to the pot, season with salt and black pepper, and brown them for about 5-7 minutes on all sides.
  5. Drain the soaked rice and add it to the pot, stirring well to mix with the spices and chicken.
  6. Pour in 400 milliliters of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
  8. Fluff the rice with a fork, serve hot, garnished with fresh parsley.
