Ingredients

  • Basmati rice - 150 grams
  • Ground lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 300 milliliters
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Pine nuts - 30 grams, toasted (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the ground lamb, breaking it up with a spoon. Add cinnamon, allspice, salt, and black pepper. Cook until the meat is browned and cooked through, about 8-10 minutes.
  5. Drain the soaked rice and add it to the skillet with the meat. Stir to combine the rice with the meat mixture.
  6. Pour in the water, bring to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed all the water.
  7. Once cooked, remove from heat and let it rest for 5 minutes, covered.
  8. Fluff the rice with a fork and serve garnished with chopped parsley and toasted pine nuts.
