- Basmati rice - 150 grams
- Ground lamb - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 300 milliliters
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Pine nuts - 30 grams, toasted (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the ground lamb, breaking it up with a spoon. Add cinnamon, allspice, salt, and black pepper. Cook until the meat is browned and cooked through, about 8-10 minutes.
- Drain the soaked rice and add it to the skillet with the meat. Stir to combine the rice with the meat mixture.
- Pour in the water, bring to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed all the water.
- Once cooked, remove from heat and let it rest for 5 minutes, covered.
- Fluff the rice with a fork and serve garnished with chopped parsley and toasted pine nuts.
