  • Basmati rice - 150 grams
  • Zucchini - 200 grams, diced
  • Plain yogurt - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Water - 300 milliliters
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced zucchini to the pan, cooking for another 5-7 minutes until the zucchini is slightly tender.
  4. Stir in the soaked rice, cumin, salt, and black pepper, ensuring all ingredients are well combined.
  5. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
  6. While the rice is cooking, in a bowl, mix the plain yogurt with a pinch of salt and a bit of black pepper to taste.
  7. Once the rice is done, fluff it with a fork and serve it on plates. Drizzle the yogurt sauce over the rice and garnish with fresh mint leaves.
