- Basmati rice - 150 grams
- Zucchini - 200 grams, diced
- Plain yogurt - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Water - 300 milliliters
- Fresh mint leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced zucchini to the pan, cooking for another 5-7 minutes until the zucchini is slightly tender.
- Stir in the soaked rice, cumin, salt, and black pepper, ensuring all ingredients are well combined.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, in a bowl, mix the plain yogurt with a pinch of salt and a bit of black pepper to taste.
- Once the rice is done, fluff it with a fork and serve it on plates. Drizzle the yogurt sauce over the rice and garnish with fresh mint leaves.
