Ingredients

  • Basmati rice - 150 grams
  • Lamb shoulder, cubed - 300 grams
  • Yogurt - 200 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Cinnamon stick - 1
  • Allspice - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 ml
  • Fresh parsley, chopped - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cubed lamb to the pan, browning the meat on all sides.
  3. Stir in the cinnamon stick, allspice, bay leaf, salt, and black pepper. Cook for an additional 2 minutes.
  4. Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for about 40 minutes, or until the lamb is tender.
  5. While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear. Drain well.
  6. After 40 minutes, remove the lid from the lamb and add the rinsed rice to the pot. Stir gently to combine.
  7. Add an additional 500 ml of water to the pot, cover, and cook on low heat for another 15-20 minutes, or until the rice is tender and the water is absorbed.
  8. In a bowl, mix the yogurt with a pinch of salt and a little black pepper, adjusting to taste.
  9. Once the rice and lamb are cooked, fluff the rice with a fork. Serve the rice topped with the lamb, drizzling the yogurt mixture over the top.
  10. Garnish with chopped parsley before serving.
