Ingredients
- Basmati rice - 150 grams
- Lamb shoulder, cubed - 300 grams
- Yogurt - 200 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Cinnamon stick - 1
- Allspice - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 ml
- Fresh parsley, chopped - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cubed lamb to the pan, browning the meat on all sides.
- Stir in the cinnamon stick, allspice, bay leaf, salt, and black pepper. Cook for an additional 2 minutes.
- Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for about 40 minutes, or until the lamb is tender.
- While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear. Drain well.
- After 40 minutes, remove the lid from the lamb and add the rinsed rice to the pot. Stir gently to combine.
- Add an additional 500 ml of water to the pot, cover, and cook on low heat for another 15-20 minutes, or until the rice is tender and the water is absorbed.
- In a bowl, mix the yogurt with a pinch of salt and a little black pepper, adjusting to taste.
- Once the rice and lamb are cooked, fluff the rice with a fork. Serve the rice topped with the lamb, drizzling the yogurt mixture over the top.
- Garnish with chopped parsley before serving.
