Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon powder - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Yogurt - 150 grams
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted
  • Sliced cucumber - for garnish
  • Mint leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, ground meat, cinnamon, allspice, and black pepper to the pot. Cook until the meat is browned, about 7-10 minutes, stirring occasionally.
  4. Remove the pot from heat and stir in the chopped parsley. Set the meat mixture aside.
  5. In a separate pot, bring 300 ml of water to a boil. Drain the soaked rice and add it to the boiling water along with 1 teaspoon of salt. Cook for about 15 minutes until the rice is tender and the water is absorbed.
  6. While the rice is cooking, prepare the yogurt sauce by mixing the yogurt with lemon juice in a bowl. Season with salt to taste.
  7. Once the rice is cooked, fluff it with a fork and drizzle the remaining tablespoon of olive oil over it. Serve the rice on a plate topped with the meat mixture.
  8. Drizzle the yogurt sauce over the dish and garnish with toasted pine nuts, sliced cucumber, and mint leaves.
