Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Yogurt - 150 grams
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
- Sliced cucumber - for garnish
- Mint leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, ground meat, cinnamon, allspice, and black pepper to the pot. Cook until the meat is browned, about 7-10 minutes, stirring occasionally.
- Remove the pot from heat and stir in the chopped parsley. Set the meat mixture aside.
- In a separate pot, bring 300 ml of water to a boil. Drain the soaked rice and add it to the boiling water along with 1 teaspoon of salt. Cook for about 15 minutes until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the yogurt sauce by mixing the yogurt with lemon juice in a bowl. Season with salt to taste.
- Once the rice is cooked, fluff it with a fork and drizzle the remaining tablespoon of olive oil over it. Serve the rice on a plate topped with the meat mixture.
- Drizzle the yogurt sauce over the dish and garnish with toasted pine nuts, sliced cucumber, and mint leaves.
