Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Plain yogurt - 200 grams
  • Chickpeas (cooked) - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Mint leaves (fresh) - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat, add the minced garlic, and sauté until fragrant, about 1 minute.
  3. Add the soaked and drained rice to the saucepan, stirring to coat with the oil and garlic.
  4. Pour in 400 milliliters of water and add 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  5. In a separate bowl, mix the plain yogurt with the remaining tablespoon of olive oil, black pepper, and cinnamon to create the yogurt sauce.
  6. Once the rice is ready, fluff it with a fork and serve it on plates.
  7. Top the rice with the yogurt sauce and scatter the cooked chickpeas over it.
  8. Garnish with chopped mint leaves before serving.
