Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Plain yogurt - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cinnamon - 1/4 teaspoon
  • Ground allspice - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and continue to sauté for another minute until fragrant.
  4. Season the chicken thighs with salt, black pepper, cinnamon, and allspice. Add the chicken to the skillet and cook until browned on all sides, about 8-10 minutes.
  5. Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for 15 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the skillet and set aside. Stir in the yogurt, mixing well to create a creamy sauce. Adjust seasoning if necessary.
  7. In a separate pot, drain the soaked rice and add it to boiling salted water. Cook for 10-12 minutes or until tender, then drain.
  8. To serve, plate the rice, top it with the chicken pieces, and drizzle the yogurt sauce over. Garnish with fresh parsley.
