- Basmati rice - 150 grams
- Chicken thighs - 300 grams, boneless and skinless
- Plain yogurt - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Ground allspice - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Season the chicken thighs with salt, black pepper, cinnamon, and allspice. Add the chicken to the skillet and cook until browned on all sides, about 8-10 minutes.
- Pour in the chicken broth, bring to a simmer, and cover the skillet. Cook for 15 minutes, or until the chicken is cooked through.
- Remove the chicken from the skillet and set aside. Stir in the yogurt, mixing well to create a creamy sauce. Adjust seasoning if necessary.
- In a separate pot, drain the soaked rice and add it to boiling salted water. Cook for 10-12 minutes or until tender, then drain.
- To serve, plate the rice, top it with the chicken pieces, and drizzle the yogurt sauce over. Garnish with fresh parsley.
