Ingredients

  • Jasmine rice - 100 grams
  • Almond milk - 400 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Cinnamon stick - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed rice, cinnamon stick, salt, black pepper, and ground cumin, and cook for 2 minutes, stirring frequently.
  5. Pour the almond milk into the saucepan and bring to a gentle boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Once the rice is cooked, remove from heat and let it sit covered for 5 minutes.
  7. Remove the cinnamon stick, fluff the rice with a fork, and stir in the lemon juice and chopped parsley.
  8. Serve warm, garnished with toasted pine nuts on top.
