- Jasmine rice - 100 grams
- Almond milk - 400 ml
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Onion - 1 small, finely chopped
- Cinnamon stick - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Ground cumin - 1/2 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed rice, cinnamon stick, salt, black pepper, and ground cumin, and cook for 2 minutes, stirring frequently.
- Pour the almond milk into the saucepan and bring to a gentle boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, remove from heat and let it sit covered for 5 minutes.
- Remove the cinnamon stick, fluff the rice with a fork, and stir in the lemon juice and chopped parsley.
- Serve warm, garnished with toasted pine nuts on top.
