Ingredients
- Basmati rice - 150 grams
- Zucchini - 2 medium-sized (approximately 300 grams)
- Carrot - 1 medium-sized (approximately 100 grams)
- Bell pepper (any color) - 1 medium-sized (approximately 150 grams)
- Onion - 1 small (approximately 70 grams)
- Garlic - 2 cloves
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and translucent.
- Dice the zucchini, carrot, and bell pepper into small cubes. Add the diced vegetables to the saucepan and cook for about 5-7 minutes, stirring occasionally until they are slightly softened.
- Stir in the ground cumin and coriander, cooking for an additional minute to release the spices' aromas.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables and spices.
- Pour in the vegetable broth, add salt and black pepper to taste, and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed the liquid.
- Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Serve the Riz Ma' Kousa Wa Khodra warm, garnished with freshly chopped parsley.
