Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized (approximately 300 grams)
  • Carrot - 1 medium-sized (approximately 100 grams)
  • Bell pepper (any color) - 1 medium-sized (approximately 150 grams)
  • Onion - 1 small (approximately 70 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and translucent.
  3. Dice the zucchini, carrot, and bell pepper into small cubes. Add the diced vegetables to the saucepan and cook for about 5-7 minutes, stirring occasionally until they are slightly softened.
  4. Stir in the ground cumin and coriander, cooking for an additional minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables and spices.
  6. Pour in the vegetable broth, add salt and black pepper to taste, and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed the liquid.
  7. Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  8. Serve the Riz Ma' Kousa Wa Khodra warm, garnished with freshly chopped parsley.
