Ingredients

  • Basmati rice - 150 grams
  • Lamb shoulder, diced - 200 grams
  • Zucchini, sliced - 150 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Tomato paste - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 400 milliliters
  • Fresh parsley, chopped - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and diced lamb to the pot, cooking until the lamb is browned on all sides, approximately 7-10 minutes.
  3. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper, mixing well to coat the meat evenly.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 20 minutes.
  5. Add the sliced zucchini to the pot, stir well, and continue to simmer for an additional 10 minutes until the zucchini is tender.
  6. Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain well.
  7. Add the rice to the pot, stirring to combine it with the meat and zucchini. Cover and cook for another 15 minutes on low heat, or until the rice has absorbed the liquid and is tender.
  8. Remove from heat, allow it to rest for 5 minutes, then fluff the rice with a fork. Serve garnished with fresh parsley.
