Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Zucchini - 2 medium (about 200 grams)
  • Ground beef - 200 grams
  • Onion - 1 small (about 70 grams), finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. In a bowl, combine the ground beef, sautéed onion and garlic, cumin, allspice, salt, and black pepper. Mix thoroughly and shape into small kebabs (about 8 pieces).
  4. In the same skillet, heat the remaining tablespoon of olive oil and grill the kebabs until browned on all sides, about 10-12 minutes. Remove and set aside.
  5. While the kebabs are cooking, slice the zucchini into thin rounds. In the same skillet, add the zucchini and sauté for about 5 minutes until slightly softened.
  6. Add the drained rice to the skillet with the zucchini, followed by the water and lemon juice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.
  7. Fluff the rice with a fork, then gently fold in the grilled kebabs. Garnish with chopped parsley before serving.
