Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add minced garlic to the pot and cook for an additional minute until fragrant.
- Stir in the diced zucchini and green peas, followed by cumin, salt, and black pepper. Cook for about 5 minutes until the vegetables are tender.
- Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
