  • Vegetable broth - 400 milliliters
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Yogurt - 150 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add minced garlic to the pot and cook for an additional minute until fragrant.
  4. Stir in the diced zucchini and green peas, followed by cumin, salt, and black pepper. Cook for about 5 minutes until the vegetables are tender.
  5. Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. While the rice cooks, prepare the yogurt sauce by mixing the yogurt with lemon juice and chopped parsley in a bowl.
