- Pine nuts - 30 grams
- Olive oil - 2 tablespoons
- Allspice - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 400 ml
- Lemon juice - 1 tablespoon
Steps
- Begin by washing the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- While the rice is soaking, prepare the zucchini by slicing off the tops and carefully hollowing them out using a small spoon or a corer, ensuring not to break the skin.
- In a skillet, heat 1 tablespoon of olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the diced tomato, parsley, allspice, salt, and black pepper, cooking for an additional 3 minutes.
- Remove the skillet from heat and mix in the soaked and drained rice along with the pine nuts. Adjust seasoning if necessary.
- Stuff the hollowed zucchinis with the rice and meat mixture, pressing down slightly to pack it in.
