- Olive oil - 2 tablespoons
- Tomato paste - 1 tablespoon
- Vegetable broth - 400 ml
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced zucchini and green beans, cooking for about 5 minutes until they start to soften.
- Add the tomato paste, cinnamon, allspice, salt, and black pepper. Stir well to coat the vegetables.
- Drain the soaked rice and add it to the pot. Stir gently to combine all ingredients.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
