  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 400 ml
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced zucchini and green beans, cooking for about 5 minutes until they start to soften.
  5. Add the tomato paste, cinnamon, allspice, salt, and black pepper. Stir well to coat the vegetables.
  6. Drain the soaked rice and add it to the pot. Stir gently to combine all ingredients.
  7. Pour in the vegetable broth and bring the mixture to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Remove from heat and let it sit, covered, for an additional 5 minutes.
  10. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
