Ingredients
- Basmati rice - 150 grams
- Lamb shoulder, diced - 200 grams
- Zucchini, sliced - 100 grams
- Onion, finely chopped - 1 medium (150 grams)
- Garlic, minced - 2 cloves
- Tomato paste - 2 tablespoons
- Cinnamon stick - 1
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 400 ml
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced lamb to the pot and cook until browned on all sides, about 8-10 minutes.
- Stir in the minced garlic, tomato paste, cinnamon stick, allspice, salt, and black pepper. Cook for another 2 minutes until fragrant.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- While the meat is cooking, slice the zucchini into thin rounds. After 20 minutes, add the zucchini to the pot and stir well.
- Drain the soaked rice and add it to the pot. Stir gently to combine, then cover and cook for another 20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
- Serve hot, garnished with fresh parsley and lemon wedges on the side.
