Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized (about 200 grams)
  • Canned chickpeas - 100 grams (drained and rinsed)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Olive oil - 2 tablespoons
  • Cinnamon powder - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 300 ml
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, cinnamon, allspice, salt, and black pepper to the pan, stirring for another minute until fragrant.
  4. Chop the zucchini into small cubes and add them to the saucepan, cooking for about 5 minutes until they start to soften.
  5. Stir in the chickpeas, then drain the soaked rice and add it to the saucepan, mixing gently to combine all ingredients.
  6. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
  7. Once cooked, fluff the rice with a fork and let it sit, covered, for another 5 minutes.
  8. Serve warm, garnished with chopped parsley.
