- Zucchini - 2 medium-sized (about 200 grams)
- Canned chickpeas - 100 grams (drained and rinsed)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Olive oil - 2 tablespoons
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 300 ml
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, cinnamon, allspice, salt, and black pepper to the pan, stirring for another minute until fragrant.
- Chop the zucchini into small cubes and add them to the saucepan, cooking for about 5 minutes until they start to soften.
- Stir in the chickpeas, then drain the soaked rice and add it to the saucepan, mixing gently to combine all ingredients.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
- Once cooked, fluff the rice with a fork and let it sit, covered, for another 5 minutes.
- Serve warm, garnished with chopped parsley.
