Ingredients

  • Zucchini - 2 medium
  • Long-grain rice - 100 grams
  • Ground beef - 150 grams
  • Onion - 1 small, finely chopped
  • Tomato paste - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Water - 500 ml
  • Tomatoes - 2 medium, diced

Steps

  1. Prepare the zucchini by cutting off the tops and hollowing them out using a corer or a small spoon. Set aside.
  2. In a skillet, heat the vegetable oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  4. Stir in the rice, parsley, cinnamon, allspice, salt, and black pepper, mixing thoroughly for 2-3 minutes.
  5. Remove the skillet from heat and let the filling cool slightly before stuffing it into the hollowed zucchini.
  6. In a large pot, add the diced tomatoes and tomato paste, then pour in the water and bring to a simmer over medium heat.
  7. Carefully place the stuffed zucchini into the pot with the tomato sauce, cover, and let it cook for about 30-35 minutes, or until the zucchini is tender.
  8. Serve hot, drizzled with some of the cooking sauce.
