- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Water - 500 ml
- Tomatoes - 2 medium, diced
Steps
- Prepare the zucchini by cutting off the tops and hollowing them out using a corer or a small spoon. Set aside.
- In a skillet, heat the vegetable oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the rice, parsley, cinnamon, allspice, salt, and black pepper, mixing thoroughly for 2-3 minutes.
- Remove the skillet from heat and let the filling cool slightly before stuffing it into the hollowed zucchini.
- In a large pot, add the diced tomatoes and tomato paste, then pour in the water and bring to a simmer over medium heat.
- Carefully place the stuffed zucchini into the pot with the tomato sauce, cover, and let it cook for about 30-35 minutes, or until the zucchini is tender.
- Serve hot, drizzled with some of the cooking sauce.
