Ingredients

  • Long-grain rice - 1 cup
  • Zucchini - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in warm water for 20 minutes before draining.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced zucchini and cook for 5-7 minutes until slightly softened.
  5. Add the soaked and drained rice to the pot, followed by the vegetable broth, cumin, cinnamon, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
