Ingredients
- Long-grain rice - 1 cup
- Zucchini - 2 medium, diced
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for 20 minutes before draining.
- In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced zucchini and cook for 5-7 minutes until slightly softened.
- Add the soaked and drained rice to the pot, followed by the vegetable broth, cumin, cinnamon, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
