Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (480ml)
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (150g)
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium (100g)
  • Green bell pepper, diced - 1 medium (100g)
  • Zucchini, diced - 1 medium (150g)
  • Frozen peas - 1/2 cup (75g)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté for 3-4 minutes until softened.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced carrot, green bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables begin to soften.
  5. Add the frozen peas, ground cumin, ground coriander, salt, and black pepper. Mix well and cook for another 2 minutes.
  6. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables and spices.
  7. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
