- Basmati rice - 1 cup (200g)
- Water - 2 cups (480ml)
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium (150g)
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium (100g)
- Green bell pepper, diced - 1 medium (100g)
- Zucchini, diced - 1 medium (150g)
- Frozen peas - 1/2 cup (75g)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté for 3-4 minutes until softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced carrot, green bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables begin to soften.
- Add the frozen peas, ground cumin, ground coriander, salt, and black pepper. Mix well and cook for another 2 minutes.
- Drain the soaked rice and add it to the pot, stirring to combine with the vegetables and spices.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
