Ingredients
- Basmati rice - 150 grams
- Lamb shoulder, diced - 250 grams
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Allspice berries - 4
- Cardamom pods - 3
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
- Fresh parsley, chopped - 2 tablespoons (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
- Add the minced garlic and diced lamb to the pot, browning the meat on all sides for about 8–10 minutes.
- Stir in the cinnamon stick, allspice berries, cardamom pods, salt, and black pepper. Mix well to coat the meat with the spices.
- Add the soaked rice to the pot, followed by 400 milliliters of water. Bring to a boil, then reduce heat to low and cover the pot.
- Simmer for 25 minutes or until the rice is cooked and the water has been absorbed.
- Remove from heat and let it sit, covered, for an additional 10 minutes.
- Fluff the rice with a fork, remove the spices, and serve garnished with chopped parsley.
