Ingredients

  • Basmati rice - 150 grams
  • Lamb shoulder, diced - 250 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Allspice berries - 4
  • Cardamom pods - 3
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 400 milliliters
  • Fresh parsley, chopped - 2 tablespoons (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  3. Add the minced garlic and diced lamb to the pot, browning the meat on all sides for about 8–10 minutes.
  4. Stir in the cinnamon stick, allspice berries, cardamom pods, salt, and black pepper. Mix well to coat the meat with the spices.
  5. Add the soaked rice to the pot, followed by 400 milliliters of water. Bring to a boil, then reduce heat to low and cover the pot.
  6. Simmer for 25 minutes or until the rice is cooked and the water has been absorbed.
  7. Remove from heat and let it sit, covered, for an additional 10 minutes.
  8. Fluff the rice with a fork, remove the spices, and serve garnished with chopped parsley.
