Ingredients
- Basmati rice - 200 grams
- Lamb shoulder, cubed - 250 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Water - 500 milliliters
- Pine nuts, toasted - 30 grams
- Fresh parsley, chopped - 1 tablespoon
Steps
- In a large pot, heat the vegetable oil over medium heat and sauté the finely chopped onion until translucent.
- Add the cubed lamb to the pot and brown on all sides, about 5-7 minutes.
- Stir in the minced garlic, ground cumin, ground cinnamon, allspice, salt, and black pepper, cooking for another 2 minutes until fragrant.
- Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes until the lamb is tender.
- While the lamb is simmering, rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- Once the lamb is tender, add the drained basmati rice to the pot and stir gently to combine.
- Cover the pot again and let it simmer for an additional 15 minutes on low heat until the rice is cooked through and has absorbed the liquid.
- Remove the pot from the heat and let it rest, covered, for 5 minutes.
- Fluff the rice gently with a fork, then serve topped with toasted pine nuts and chopped parsley.
