Ingredients
- Basmati rice - 150 grams
- Lamb or beef kebab - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Cinnamon stick - 1
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 300 milliliters
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cinnamon stick, allspice, salt, and black pepper to the skillet. Cook for an additional 2 minutes until fragrant.
- Stir in the chopped tomato and cook for another 3 minutes until softened.
- Remove the cinnamon stick and add the kebab pieces to the skillet. Sear the kebabs on all sides for about 5-7 minutes, then remove from the skillet and set aside.
- In the same skillet, add the soaked and drained rice, stirring to coat it in the oil and spices. Cook for 2 minutes.
- Pour in the broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- While the rice is cooking, grill or pan-fry the kebabs until cooked through, about 5-8 minutes depending on thickness.
- Once the rice is done, fluff it with a fork and serve it topped with the kebabs, toasted pine nuts, and chopped parsley.
