Ingredients

  • Basmati rice - 150 grams
  • Lamb or beef kebab - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Cinnamon stick - 1
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 300 milliliters
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cinnamon stick, allspice, salt, and black pepper to the skillet. Cook for an additional 2 minutes until fragrant.
  4. Stir in the chopped tomato and cook for another 3 minutes until softened.
  5. Remove the cinnamon stick and add the kebab pieces to the skillet. Sear the kebabs on all sides for about 5-7 minutes, then remove from the skillet and set aside.
  6. In the same skillet, add the soaked and drained rice, stirring to coat it in the oil and spices. Cook for 2 minutes.
  7. Pour in the broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  8. While the rice is cooking, grill or pan-fry the kebabs until cooked through, about 5-8 minutes depending on thickness.
  9. Once the rice is done, fluff it with a fork and serve it topped with the kebabs, toasted pine nuts, and chopped parsley.
