- Basmati rice - 150 grams
- Green lentils - 100 grams
- Onion - 1 medium, finely sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 400 milliliters
- Parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a saucepan, combine the green lentils with 300 ml of vegetable broth and bring to a boil. Reduce the heat and simmer until tender, about 15-20 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook, stirring frequently, until caramelized and golden brown, about 10-12 minutes.
- Add the minced garlic to the skillet and sauté for an additional 2 minutes until fragrant.
- Stir in the drained lentils, cinnamon stick, bay leaf, salt, and black pepper. Mix well and cook for another 2 minutes.
- Add the soaked and drained rice to the skillet, stirring to combine with the lentils and onion mixture.
- Pour in the remaining 100 ml of vegetable broth, cover the skillet, and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove the skillet from heat, discard the cinnamon stick and bay leaf, and let it sit covered for 5 minutes.
- Fluff the rice with a fork, sprinkle with chopped parsley, and serve with lemon wedges on the side.
