Ingredients

  • Basmati rice - 150 grams
  • Green lentils - 100 grams
  • Onion - 1 medium, finely sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 400 milliliters
  • Parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a saucepan, combine the green lentils with 300 ml of vegetable broth and bring to a boil. Reduce the heat and simmer until tender, about 15-20 minutes. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook, stirring frequently, until caramelized and golden brown, about 10-12 minutes.
  4. Add the minced garlic to the skillet and sauté for an additional 2 minutes until fragrant.
  5. Stir in the drained lentils, cinnamon stick, bay leaf, salt, and black pepper. Mix well and cook for another 2 minutes.
  6. Add the soaked and drained rice to the skillet, stirring to combine with the lentils and onion mixture.
  7. Pour in the remaining 100 ml of vegetable broth, cover the skillet, and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
  8. Remove the skillet from heat, discard the cinnamon stick and bay leaf, and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork, sprinkle with chopped parsley, and serve with lemon wedges on the side.
