Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Radishes - 3, thinly sliced
  • Green bell pepper - 1/2, diced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Pomegranate seeds - 1/4 cup
  • Sumac - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil, add 1/2 teaspoon of salt, and then add the soaked rice.
  3. Reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
  4. While the rice is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add diced tomatoes, cucumber, radishes, and green bell pepper to the skillet, and cook for another 3-4 minutes until slightly softened.
  6. Remove the skillet from heat and stir in chopped parsley, mint, lemon juice, sumac, and black pepper to taste.
  7. Once the rice is done, fluff it with a fork and gently mix in the sautéed vegetable mixture.
  8. Serve the rice warm, garnished with pomegranate seeds on top.
