Ingredients
- Basmati rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Radishes - 3, thinly sliced
- Green bell pepper - 1/2, diced
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Pomegranate seeds - 1/4 cup
- Sumac - 1 teaspoon
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, bring 2 cups of water to a boil, add 1/2 teaspoon of salt, and then add the soaked rice.
- Reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add diced tomatoes, cucumber, radishes, and green bell pepper to the skillet, and cook for another 3-4 minutes until slightly softened.
- Remove the skillet from heat and stir in chopped parsley, mint, lemon juice, sumac, and black pepper to taste.
- Once the rice is done, fluff it with a fork and gently mix in the sautéed vegetable mixture.
- Serve the rice warm, garnished with pomegranate seeds on top.
