- Basmati rice - 150 grams
- Water - 300 ml
- Vegetable oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cardamom pods - 4, crushed
- Cinnamon stick - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic, crushed cardamom pods, and cinnamon stick to the saucepan, stirring for an additional 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the oil and spices.
- Pour in 300 ml of water, add salt and black pepper, and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes until the rice is tender and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and stir in the toasted pine nuts and chopped parsley before serving.
