Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Vegetable oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cardamom pods - 4, crushed
  • Cinnamon stick - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Add the minced garlic, crushed cardamom pods, and cinnamon stick to the saucepan, stirring for an additional 1-2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the oil and spices.
  5. Pour in 300 ml of water, add salt and black pepper, and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes until the rice is tender and the water is absorbed.
  7. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork and stir in the toasted pine nuts and chopped parsley before serving.
