Ingredients
- Basmati rice - 150 grams
- Lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Bell peppers - 2, halved and seeded
- Tomato - 1, diced
- Parsley - a handful, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, coriander, turmeric, salt, and black pepper. Cook for another 2 minutes until fragrant.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce to a simmer and cook for 20 minutes or until lentils are tender.
- While the lentils are cooking, prepare the stuffed bell peppers. In a bowl, mix the cooked lentils with the diced tomato and chopped parsley. Stuff the mixture into the halved bell peppers.
- In a separate pot, bring water to a boil and place the stuffed bell peppers inside. Cover and steam for about 15 minutes until the peppers are tender.
- Drain the soaked rice and add it to the pot with the lentils. Stir well and add additional water if necessary to achieve a fluffy texture. Cover and simmer for another 15 minutes until the rice is cooked.
- Serve the rice on a plate, topped with the steamed stuffed peppers. Drizzle with the remaining olive oil and garnish with extra parsley if desired.
