Ingredients

  • Basmati rice - 150 grams
  • Lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Bell peppers - 2, halved and seeded
  • Tomato - 1, diced
  • Parsley - a handful, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin, coriander, turmeric, salt, and black pepper. Cook for another 2 minutes until fragrant.
  4. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce to a simmer and cook for 20 minutes or until lentils are tender.
  5. While the lentils are cooking, prepare the stuffed bell peppers. In a bowl, mix the cooked lentils with the diced tomato and chopped parsley. Stuff the mixture into the halved bell peppers.
  6. In a separate pot, bring water to a boil and place the stuffed bell peppers inside. Cover and steam for about 15 minutes until the peppers are tender.
  7. Drain the soaked rice and add it to the pot with the lentils. Stir well and add additional water if necessary to achieve a fluffy texture. Cover and simmer for another 15 minutes until the rice is cooked.
  8. Serve the rice on a plate, topped with the steamed stuffed peppers. Drizzle with the remaining olive oil and garnish with extra parsley if desired.
