Ingredients

  • Basmati rice - 150 grams
  • Brown lentils - 100 grams

  • Vegetable oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Plain yogurt - 200 grams
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and soak them in water for 30 minutes.
  2. In a pot, heat 1 tablespoon of vegetable oil over medium heat and sauté the chopped onion until golden brown.
  3. Add minced garlic, cumin, coriander, salt, and black pepper to the onions, stirring for 1-2 minutes until fragrant.
  4. Drain the soaked lentils and add them to the pot along with 500 milliliters of water. Bring to a boil, then reduce the heat and simmer for about 15 minutes until the lentils are tender.
  5. Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain well.
  6. Once the lentils are cooked, add the rinsed rice to the pot with the lentils and stir well. Cover the pot and cook on low heat for an additional 15 minutes, or until the rice is cooked and all the water is absorbed.
  7. In a small bowl, mix the plain yogurt with a pinch of salt and a squeeze of lemon juice for flavor.
  8. Serve the rice and lentil mixture on a plate, topped with a dollop of the seasoned yogurt, and garnish with fresh parsley.
