Ingredients
- Long-grain rice - 1 cup
- Green or brown lentils - 1/2 cup
- Zucchini - 1 medium, diced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 2 cups
- Fresh parsley - for garnish
Steps
- Rinse the rice and lentils under cold water until the water runs clear, then soak the lentils for 15 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until golden brown, about 5-7 minutes.
- Add minced garlic, cumin, coriander, salt, and black pepper to the onions and cook for another 1-2 minutes until fragrant.
- Drain the lentils and add them to the pot along with 2 cups of water. Bring to a boil, then reduce the heat and let simmer for 10-15 minutes until the lentils are tender but not mushy.
- In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the diced zucchini and sauté for about 5-7 minutes until soft and slightly browned. Set aside.
- Once the lentils are cooked, add the rinsed rice to the pot, stir gently, and bring back to a boil. Reduce the heat to low, cover, and cook for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Once the rice is done, fluff with a fork and gently fold in the sautéed zucchini.
- Serve warm, garnished with fresh parsley.
