Ingredients

  • Long-grain rice - 1 cup
  • Green or brown lentils - 1/2 cup
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 2 cups
  • Fresh parsley - for garnish

Steps

  1. Rinse the rice and lentils under cold water until the water runs clear, then soak the lentils for 15 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until golden brown, about 5-7 minutes.
  3. Add minced garlic, cumin, coriander, salt, and black pepper to the onions and cook for another 1-2 minutes until fragrant.
  4. Drain the lentils and add them to the pot along with 2 cups of water. Bring to a boil, then reduce the heat and let simmer for 10-15 minutes until the lentils are tender but not mushy.
  5. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the diced zucchini and sauté for about 5-7 minutes until soft and slightly browned. Set aside.
  6. Once the lentils are cooked, add the rinsed rice to the pot, stir gently, and bring back to a boil. Reduce the heat to low, cover, and cook for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  7. Once the rice is done, fluff with a fork and gently fold in the sautéed zucchini.
  8. Serve warm, garnished with fresh parsley.
