Ingredients

  • Basmati rice - 150 grams
  • Brown lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and soak them in water for about 20 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat and sauté half of the chopped onion until translucent.
  3. Add the soaked lentils and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for about 15 minutes until the lentils are tender.
  4. In a separate pot, heat the remaining olive oil over medium heat and sauté the remaining onion, garlic, carrot, zucchini, and bell pepper until softened, about 7-10 minutes.
  5. Add the cumin, cinnamon, salt, and black pepper to the sautéed vegetables, stirring to combine.
  6. Stir in the rinsed basmati rice into the vegetable mixture and sauté for another 2 minutes.
  7. Add the simmered lentils (with any remaining broth) to the rice and vegetable mixture, stirring to combine.
  8. Cover the pot and let it cook on low heat for about 15-20 minutes, or until the rice is fully cooked and has absorbed the flavors.
  9. Once done, remove from heat and let it sit, covered, for 5 minutes.
  10. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
