Ingredients
- Basmati rice - 150 grams
- Brown lentils - 100 grams
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Bell pepper - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 400 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and soak them in water for about 20 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat and sauté half of the chopped onion until translucent.
- Add the soaked lentils and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for about 15 minutes until the lentils are tender.
- In a separate pot, heat the remaining olive oil over medium heat and sauté the remaining onion, garlic, carrot, zucchini, and bell pepper until softened, about 7-10 minutes.
- Add the cumin, cinnamon, salt, and black pepper to the sautéed vegetables, stirring to combine.
- Stir in the rinsed basmati rice into the vegetable mixture and sauté for another 2 minutes.
- Add the simmered lentils (with any remaining broth) to the rice and vegetable mixture, stirring to combine.
- Cover the pot and let it cook on low heat for about 15-20 minutes, or until the rice is fully cooked and has absorbed the flavors.
- Once done, remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
