  • Lamb shoulder, diced - 200 grams
  • Onion, finely chopped - 1 medium
  • Garlic cloves, minced - 2
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters
  • Fresh parsley, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  3. Add the minced garlic and diced lamb to the pot, cooking until browned on all sides, about 8-10 minutes.
  4. Stir in the ground cumin, coriander, allspice, cinnamon, salt, and black pepper, cooking for another 2 minutes to toast the spices.
  5. Add the lentils and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the lentils are tender.
  6. Drain the soaked rice and add it to the pot, stirring gently. Cover and cook on low heat for an additional 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
  7. Fluff the rice with a fork and let it sit, covered, for an additional 5 minutes before serving.
  8. Garnish with fresh chopped parsley and serve warm.
