- Lamb shoulder, diced - 200 grams

- Garlic cloves, minced - 2
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Allspice - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 milliliters
- Fresh parsley, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
- Add the minced garlic and diced lamb to the pot, cooking until browned on all sides, about 8-10 minutes.
- Stir in the ground cumin, coriander, allspice, cinnamon, salt, and black pepper, cooking for another 2 minutes to toast the spices.
- Add the lentils and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the lentils are tender.
- Drain the soaked rice and add it to the pot, stirring gently. Cover and cook on low heat for an additional 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Fluff the rice with a fork and let it sit, covered, for an additional 5 minutes before serving.
- Garnish with fresh chopped parsley and serve warm.
