Ingredients

  • Basmati rice - 200 grams
  • Brown lentils - 100 grams
  • Ground lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Water - 500 milliliters
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, add the brown lentils and cover with water. Bring to a boil and simmer for 15-20 minutes until tender. Drain and set aside.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add half of the chopped onion and sauté until translucent.
  4. Add the minced garlic, cumin, coriander, cinnamon, salt, and black pepper to the skillet. Stir for 1-2 minutes until fragrant.
  5. Add the soaked and drained basmati rice to the skillet, stirring to coat with the spices, then pour in 400 milliliters of water. Bring to a boil, then reduce heat and cover. Cook for 15-20 minutes until the rice is fluffy and water is absorbed.
  6. Meanwhile, in a bowl, combine the ground lamb with the remaining chopped onion, salt, and pepper. Form into small kebabs.
  7. In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the kebabs for about 5-7 minutes, turning until browned and cooked through.
  8. Once the rice is cooked, gently fold in the cooked lentils and toasted pine nuts.
  9. Serve the rice mixture on plates, topped with kebabs and garnished with fresh parsley.
