Ingredients
- Basmati rice - 200 grams
- Brown lentils - 100 grams
- Ground lamb - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Water - 500 milliliters
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, add the brown lentils and cover with water. Bring to a boil and simmer for 15-20 minutes until tender. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add half of the chopped onion and sauté until translucent.
- Add the minced garlic, cumin, coriander, cinnamon, salt, and black pepper to the skillet. Stir for 1-2 minutes until fragrant.
- Add the soaked and drained basmati rice to the skillet, stirring to coat with the spices, then pour in 400 milliliters of water. Bring to a boil, then reduce heat and cover. Cook for 15-20 minutes until the rice is fluffy and water is absorbed.
- Meanwhile, in a bowl, combine the ground lamb with the remaining chopped onion, salt, and pepper. Form into small kebabs.
- In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the kebabs for about 5-7 minutes, turning until browned and cooked through.
- Once the rice is cooked, gently fold in the cooked lentils and toasted pine nuts.
- Serve the rice mixture on plates, topped with kebabs and garnished with fresh parsley.
