- Basmati rice - 150 grams
- Green lentils - 100 grams
- Onion - 1 medium, thinly sliced
- Vegetable oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 ml
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak in water for 20 minutes.
- In a pot, combine green lentils with 250 ml of water, add 1/2 teaspoon of salt, and bring to a boil. Reduce heat and simmer for about 15-20 minutes until lentils are tender but not mushy. Drain and set aside.
- In a large skillet, heat 3 tablespoons of vegetable oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-12 minutes. Remove half for garnish.
- To the remaining onions in the skillet, add the drained lentils, ground cumin, ground cinnamon, black pepper, and remaining salt. Stir to combine and cook for 2 minutes.
- Add the soaked and drained rice to the skillet with the lentil mixture, and stir gently to combine. Add 250 ml of water and bring to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
- Fluff the rice with a fork and let it sit covered for an additional 5 minutes. Serve hot, garnished with the reserved caramelized onions and fresh parsley.
