Ingredients

  • Basmati rice - 150 grams
  • Green lentils - 100 grams
  • Onion - 1 medium, thinly sliced
  • Vegetable oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 ml
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak in water for 20 minutes.
  2. In a pot, combine green lentils with 250 ml of water, add 1/2 teaspoon of salt, and bring to a boil. Reduce heat and simmer for about 15-20 minutes until lentils are tender but not mushy. Drain and set aside.
  3. In a large skillet, heat 3 tablespoons of vegetable oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-12 minutes. Remove half for garnish.
  4. To the remaining onions in the skillet, add the drained lentils, ground cumin, ground cinnamon, black pepper, and remaining salt. Stir to combine and cook for 2 minutes.
  5. Add the soaked and drained rice to the skillet with the lentil mixture, and stir gently to combine. Add 250 ml of water and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
  7. Fluff the rice with a fork and let it sit covered for an additional 5 minutes. Serve hot, garnished with the reserved caramelized onions and fresh parsley.
