Ingredients
- Basmati rice - 150 grams
- Green lentils - 100 grams
- Chicken thighs (boneless, skinless) - 250 grams
- Onion - 1 medium (150 grams)
- Garlic - 2 cloves
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Water - 500 milliliters
- Fresh parsley - 2 tablespoons (for garnish)
Steps
- Rinse the basmati rice in cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, add the green lentils and 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until tender. Drain and set aside.
- In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until golden brown, about 10 minutes. Remove half for garnish.
- In the same pan, add minced garlic, cumin, cinnamon, salt, and black pepper. Stir for 1 minute until fragrant.
- Add the chicken thighs to the pan and cook for about 5 minutes on each side until browned.
- Add the drained lentils and soaked, drained rice to the pan. Pour in 500ml of water, bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes until the rice is fluffy and water is absorbed.
- Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
- Serve the rice and lentil mixture topped with the reserved caramelized onions and chopped parsley for garnish.
