Ingredients

  • Basmati rice - 150 grams
  • Green lentils - 100 grams
  • Chicken thighs (boneless, skinless) - 250 grams
  • Onion - 1 medium (150 grams)
  • Garlic - 2 cloves
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Water - 500 milliliters
  • Fresh parsley - 2 tablespoons (for garnish)

Steps

  1. Rinse the basmati rice in cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, add the green lentils and 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until tender. Drain and set aside.
  3. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until golden brown, about 10 minutes. Remove half for garnish.
  4. In the same pan, add minced garlic, cumin, cinnamon, salt, and black pepper. Stir for 1 minute until fragrant.
  5. Add the chicken thighs to the pan and cook for about 5 minutes on each side until browned.
  6. Add the drained lentils and soaked, drained rice to the pan. Pour in 500ml of water, bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes until the rice is fluffy and water is absorbed.
  7. Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
  8. Serve the rice and lentil mixture topped with the reserved caramelized onions and chopped parsley for garnish.
