Ingredients

  • Basmati rice - 150 grams
  • Green lentils - 100 grams
  • Okra - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Water - 600 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, coriander, cinnamon, salt, and black pepper to the pot. Cook for another 2 minutes until fragrant.
  4. Add the green lentils and water to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes until the lentils are tender.
  5. While the lentils are cooking, trim the okra and sauté it in the remaining tablespoon of olive oil in a separate pan over medium heat until lightly browned, about 5-7 minutes. Set aside.
  6. After 20 minutes, drain the soaked rice and add it to the lentils. Stir well and add an additional 500 milliliters of water. Bring to a boil again, then cover and reduce the heat to low. Cook for 15-18 minutes until the rice is fluffy and the water is absorbed.
  7. Once the rice is done, gently fluff it with a fork and fold in the sautéed okra.
  8. Serve the Riz Ma' Bukhari Wa Mujadara Wa Bamia warm, garnished with fresh parsley.
