Ingredients
- Basmati rice - 150 grams
- Green lentils - 100 grams
- Okra - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Water - 600 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, cinnamon, salt, and black pepper to the pot. Cook for another 2 minutes until fragrant.
- Add the green lentils and water to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes until the lentils are tender.
- While the lentils are cooking, trim the okra and sauté it in the remaining tablespoon of olive oil in a separate pan over medium heat until lightly browned, about 5-7 minutes. Set aside.
- After 20 minutes, drain the soaked rice and add it to the lentils. Stir well and add an additional 500 milliliters of water. Bring to a boil again, then cover and reduce the heat to low. Cook for 15-18 minutes until the rice is fluffy and the water is absorbed.
- Once the rice is done, gently fluff it with a fork and fold in the sautéed okra.
- Serve the Riz Ma' Bukhari Wa Mujadara Wa Bamia warm, garnished with fresh parsley.
