Ingredients
- Basmati rice - 150 grams
- Brown lentils - 100 grams
- Onion - 1 large, thinly sliced
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Vegetable oil - 3 tablespoons
- Salt - 1 teaspoon (or to taste)
- Black pepper - 1/2 teaspoon (or to taste)
- Water - 600 milliliters
- Fresh parsley - for garnish (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the brown lentils with 300 milliliters of water and bring to a boil. Reduce heat and simmer for about 15-20 minutes or until the lentils are tender but not mushy. Drain and set aside.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onion and sauté until golden brown and caramelized, about 10-15 minutes. Remove half of the onions and set aside for garnish.
- Add minced garlic, cumin, and cinnamon to the skillet with the remaining onions, stirring for about 1 minute until fragrant.
- Add the soaked and drained rice to the skillet, stirring well to coat it with the onion mixture. Add the cooked lentils, salt, black pepper, and 300 milliliters of water. Bring to a boil.
- Reduce heat to low, cover the pot, and let it cook for about 15-20 minutes or until the rice is tender and all the water is absorbed.
- Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes.
- Serve the rice on plates, topped with the reserved caramelized onions and garnished with fresh parsley if desired.
