Ingredients

  • Basmati rice - 200 grams
  • Water - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground beef - 150 grams
  • Tomato paste - 1 tablespoon
  • Cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell peppers - 2 medium (any color), tops cut off and seeds removed
  • Tomato - 1 medium, diced
  • Parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and ground beef, cooking until the beef is browned, approximately 5-7 minutes.
  4. Add the tomato paste, cinnamon, allspice, salt, and black pepper. Mix well and cook for another 2 minutes.
  5. Remove the skillet from heat and stir in the diced tomato, chopped parsley, and toasted pine nuts. Let the mixture cool slightly.
  6. Preheat the oven to 180°C (350°F). Stuff the bell peppers with the beef mixture, packing it in tightly.
  7. In a medium saucepan, bring 400 ml of water to a boil. Drain the soaked rice and add it to the boiling water. Cook for about 10 minutes, then remove from heat and let it sit covered for 10 minutes.
  8. Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish and cover it with aluminum foil.
  9. Bake the stuffed peppers in the preheated oven for 25-30 minutes until they are tender.
  10. Serve the stuffed peppers on a bed of the fluffy basmati rice, garnished with additional parsley if desired.
