Ingredients
- Basmati rice - 200 grams
- Water - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground beef - 150 grams
- Tomato paste - 1 tablespoon
- Cinnamon - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell peppers - 2 medium (any color), tops cut off and seeds removed
- Tomato - 1 medium, diced
- Parsley - 2 tablespoons, chopped
- Pine nuts - 30 grams, toasted
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and ground beef, cooking until the beef is browned, approximately 5-7 minutes.
- Add the tomato paste, cinnamon, allspice, salt, and black pepper. Mix well and cook for another 2 minutes.
- Remove the skillet from heat and stir in the diced tomato, chopped parsley, and toasted pine nuts. Let the mixture cool slightly.
- Preheat the oven to 180°C (350°F). Stuff the bell peppers with the beef mixture, packing it in tightly.
- In a medium saucepan, bring 400 ml of water to a boil. Drain the soaked rice and add it to the boiling water. Cook for about 10 minutes, then remove from heat and let it sit covered for 10 minutes.
- Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish and cover it with aluminum foil.
- Bake the stuffed peppers in the preheated oven for 25-30 minutes until they are tender.
- Serve the stuffed peppers on a bed of the fluffy basmati rice, garnished with additional parsley if desired.
