Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs (boneless, skinless) - 200 grams
  • Onion (medium, finely chopped) - 1
  • Garlic (minced) - 2 cloves
  • Cinnamon stick - 1
  • Cardamom pods - 3
  • Cloves - 2
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken broth - 400 ml
  • Plain yogurt - 100 grams
  • Fresh parsley (chopped, for garnish) - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, cinnamon stick, cardamom pods, and cloves, and cook for an additional minute until fragrant.
  4. Add the chicken thighs to the pot, season with salt and black pepper, and sauté until lightly browned on all sides.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice in the oil and spices.
  6. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover the pot and simmer for 20 minutes or until the rice is tender and liquid is absorbed.
  7. Once cooked, remove from heat and let it sit covered for another 5 minutes.
  8. Fluff the rice with a fork and serve topped with a generous dollop of plain yogurt and garnish with chopped parsley.
