- Basmati rice - 150 grams
- Chicken thighs (boneless, skinless) - 200 grams
- Onion (medium, finely chopped) - 1
- Garlic (minced) - 2 cloves
- Cinnamon stick - 1
- Cardamom pods - 3
- Cloves - 2
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 400 ml
- Plain yogurt - 100 grams
- Fresh parsley (chopped, for garnish) - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, cinnamon stick, cardamom pods, and cloves, and cook for an additional minute until fragrant.
- Add the chicken thighs to the pot, season with salt and black pepper, and sauté until lightly browned on all sides.
- Drain the soaked rice and add it to the pot, stirring to coat the rice in the oil and spices.
- Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover the pot and simmer for 20 minutes or until the rice is tender and liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork and serve topped with a generous dollop of plain yogurt and garnish with chopped parsley.
