Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the vegetable oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the ground meat and cook until browned, breaking it apart with a spoon, about 7-8 minutes.
  5. Add the diced tomatoes, cinnamon, allspice, salt, and black pepper, stirring well to combine. Cook for another 5 minutes until the tomatoes soften.
  6. Mix in the diced zucchini and cook for an additional 5 minutes, allowing the zucchini to soften slightly.
  7. Drain the soaked rice and add it to the pot, stirring gently to incorporate it with the meat and vegetables.
  8. Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice has absorbed the liquid and is tender.
  9. Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes.
  10. Serve hot, garnished with fresh parsley.
