- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomatoes - 1 medium, diced
- Vegetable oil - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken or vegetable broth - 300 ml
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the vegetable oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the ground meat and cook until browned, breaking it apart with a spoon, about 7-8 minutes.
- Add the diced tomatoes, cinnamon, allspice, salt, and black pepper, stirring well to combine. Cook for another 5 minutes until the tomatoes soften.
- Mix in the diced zucchini and cook for an additional 5 minutes, allowing the zucchini to soften slightly.
- Drain the soaked rice and add it to the pot, stirring gently to incorporate it with the meat and vegetables.
- Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice has absorbed the liquid and is tender.
- Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
