- Basmati rice - 200 grams
- Water - 400 ml
- Vegetable oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Bell pepper - 1 medium, diced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced carrot and bell pepper, and cook for about 5 minutes until they begin to soften.
- Add the green peas, cumin, cinnamon, salt, and black pepper, mixing well.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
- Pour in the 400 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- Remove the pot from heat and let it sit covered for 5 minutes, then fluff the rice with a fork.
- Stir in the chopped parsley and lemon juice before serving.
