Ingredients

  • Basmati rice - 200 grams
  • Water - 400 ml
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Bell pepper - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the diced carrot and bell pepper, and cook for about 5 minutes until they begin to soften.
  5. Add the green peas, cumin, cinnamon, salt, and black pepper, mixing well.
  6. Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
  7. Pour in the 400 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
  8. Remove the pot from heat and let it sit covered for 5 minutes, then fluff the rice with a fork.
  9. Stir in the chopped parsley and lemon juice before serving.
