Ingredients
- Basmati rice - 200 grams
- Lamb shoulder, diced - 300 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 small
- Green peas - 100 grams
- Cinnamon stick - 1
- Cardamom pods - 3
- Cloves - 3
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 milliliters
- Fresh parsley, chopped (for garnish) - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic, diced lamb, and sauté until the meat is browned on all sides, about 7-10 minutes.
- Stir in the diced carrot, green peas, cinnamon stick, cardamom pods, cloves, bay leaf, salt, black pepper, and turmeric powder. Cook for another 3-4 minutes.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the meat and spices.
- Pour in the water, bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and the water is absorbed.
- Once cooked, remove the pot from heat and let it sit, covered, for an additional 10 minutes.
- Fluff the rice with a fork, remove the whole spices, and serve hot, garnished with chopped fresh parsley.
