Ingredients

  • Basmati rice - 200 grams
  • Water - 400 milliliters
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Peas - 50 grams, frozen or fresh
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Ground cinnamon - 1/4 teaspoon
  • Lamb or beef kebabs - 300 grams
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent.
  3. Stir in the diced carrot, peas, salt, black pepper, cumin, and cinnamon. Cook for another 3-4 minutes until the vegetables are tender.
  4. Drain the soaked rice and add it to the pot with the sautéed vegetables. Stir to combine, then add the saffron threads dissolved in 400ml of water. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.
  6. While the rice is cooking, preheat a grill or grill pan over medium-high heat. Season the kebabs with salt and pepper, and grill them for about 8-10 minutes, turning occasionally, until cooked to your liking.
  7. Once the rice is done, fluff it with a fork and drizzle the remaining tablespoon of olive oil. Serve the rice on plates, topped with grilled kebabs and garnished with fresh parsley.
