- Basmati rice - 200 grams
- Water - 400 milliliters
- Saffron threads - 0.1 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Peas - 50 grams, frozen or fresh
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Lamb or beef kebabs - 300 grams
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent.
- Stir in the diced carrot, peas, salt, black pepper, cumin, and cinnamon. Cook for another 3-4 minutes until the vegetables are tender.
- Drain the soaked rice and add it to the pot with the sautéed vegetables. Stir to combine, then add the saffron threads dissolved in 400ml of water. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, preheat a grill or grill pan over medium-high heat. Season the kebabs with salt and pepper, and grill them for about 8-10 minutes, turning occasionally, until cooked to your liking.
- Once the rice is done, fluff it with a fork and drizzle the remaining tablespoon of olive oil. Serve the rice on plates, topped with grilled kebabs and garnished with fresh parsley.
