- Basmati rice - 150 grams
- Chicken thighs - 300 grams, boneless and skinless
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1
- Cardamom pods - 2, crushed
- Cloves - 3
- Bay leaf - 1
- Vegetable oil - 2 tablespoons
- Chicken broth - 400 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 50 grams, slivered and toasted
- Raisins - 30 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes before draining.
- In a large pot, heat the vegetable oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the chicken thighs to the pot and cook until browned on all sides, about 7-10 minutes.
- Stir in the cinnamon stick, crushed cardamom pods, cloves, bay leaf, salt, and black pepper.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low and cover the pot, simmering for 15 minutes.
- Add the drained rice to the pot, gently stirring it into the broth and chicken mixture. Cover and cook for an additional 20 minutes on low heat until the rice is tender and has absorbed all the liquid.
- Once cooked, remove the pot from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork, then stir in the toasted almonds, raisins, and chopped parsley before serving.
