- Basmati rice - 1 cup
- Chicken thighs - 300 grams, boneless and skinless
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Green peas - 1/2 cup, frozen or fresh
- Cinnamon stick - 1
- Cardamom pods - 3
- Bay leaf - 1
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Chicken broth - 2 cups
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat, and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and sauté for another 2 minutes.
- Incorporate the chicken thighs, and cook until they are browned on all sides, about 5-7 minutes.
- Stir in the cinnamon stick, cardamom pods, bay leaf, turmeric, cumin, salt, and black pepper. Cook for another minute to release the spices' aromas.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
- Remove the chicken pieces and set aside. Add the soaked and drained rice to the pot, stir gently, and place the chicken back on top.
- Cover the pot again and let it cook on low heat for about 20 minutes, or until the rice is tender and has absorbed the broth.
- Once cooked, fluff the rice with a fork, mixing in the green peas and adjusting seasoning if necessary. Let it sit covered for another 5 minutes.
- Serve the rice on a plate, topped with chicken pieces, and garnish with fresh parsley.
