Ingredients

  • Basmati rice - 1 cup
  • Chicken thighs - 300 grams, boneless and skinless
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup, frozen or fresh
  • Cinnamon stick - 1
  • Cardamom pods - 3
  • Bay leaf - 1
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Chicken broth - 2 cups
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat, and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and sauté for another 2 minutes.
  4. Incorporate the chicken thighs, and cook until they are browned on all sides, about 5-7 minutes.
  5. Stir in the cinnamon stick, cardamom pods, bay leaf, turmeric, cumin, salt, and black pepper. Cook for another minute to release the spices' aromas.
  6. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
  7. Remove the chicken pieces and set aside. Add the soaked and drained rice to the pot, stir gently, and place the chicken back on top.
  8. Cover the pot again and let it cook on low heat for about 20 minutes, or until the rice is tender and has absorbed the broth.
  9. Once cooked, fluff the rice with a fork, mixing in the green peas and adjusting seasoning if necessary. Let it sit covered for another 5 minutes.
  10. Serve the rice on a plate, topped with chicken pieces, and garnish with fresh parsley.
