  • Basmati rice - 150 grams
  • Okra - 200 grams, trimmed and halved
  • Chicken breast, boneless - 200 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced chicken, ground cumin, ground coriander, cinnamon powder, salt, and black pepper. Cook until the chicken is browned, about 5-7 minutes.
  4. Add the diced tomato and okra to the pot. Stir well and cook for another 5 minutes until the vegetables soften.
  5. Add the soaked and drained rice to the pot, mixing gently. Pour in the water and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is tender and water is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh parsley and serve warm.
