Ingredients
- Basmati rice - 150 grams
- Chicken thighs - 250 grams, boneless and skinless, cut into pieces
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Allspice - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the chicken pieces and brown them on all sides for about 5-7 minutes.
- Add the diced tomato, ground cumin, ground coriander, allspice, cinnamon, salt, and black pepper. Stir to combine and cook for another 5 minutes.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 10 minutes.
- While the chicken is simmering, drain the soaked rice and add it to the pot. Stir gently to combine.
- Cover the pot and cook on low heat for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve hot.
