Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs - 250 grams, boneless and skinless, cut into pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 400 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the chicken pieces and brown them on all sides for about 5-7 minutes.
  5. Add the diced tomato, ground cumin, ground coriander, allspice, cinnamon, salt, and black pepper. Stir to combine and cook for another 5 minutes.
  6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 10 minutes.
  7. While the chicken is simmering, drain the soaked rice and add it to the pot. Stir gently to combine.
  8. Cover the pot and cook on low heat for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  9. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh parsley and serve hot.
